Fats, Oils and Grease (FOG)
The Gwinnett County Grease Management Program exists to protect the county’s collection system from illicit fats, oils, and grease (FOG) discharge that can reduce the capacity of the sewers and represent a significant expense to remove from the system. The Grease Management Program is tasked with making sure commercial users of the collection system have properly sized grease interceptors, and that they properly maintain these structures. All commercial facilities, whether newly constructed or existing facilities that are under new ownership, must have their trap capacity reviewed before they will be granted a permit to tie to the collection system. This capacity is determined by the size of the restaurant, the equipment list, and menu items that will be served. The Gwinnett County Grease Ordinance gives specific requirements for fats, oils, and grease mitigation.
